Lemon Drizzle Cake
This is the recipe I got from Tim's mum years ago - and it never fails.
Ingredients
4oz marg
6oz caster sugar
2 eggs
6oz self-raising flour
4 tblsps milk
1 lemon
Method
Cream fat and sugar till light and fluffy. Mix eggs and milk and stir into mixture. Add flour and finely grated zest of the lemon.
Beat throughly. Line a loaf tin with a loaf liner (d'oh!) and add the mixture. Bake in preheated oven at 180c for approx 50 mins. Juice the lemon and when the cake is cooked and almost cold, drizzle the juice all over the top of the cake.
Enjoy!

Yummy, Bobs. Amazing how many people like this, lol.
I make a lemon syrup and put that over my cake..making holes in cake first so it sinks in. Sometimes I drizzle a bit of melted chocolate over the top then.

Thanks for that Bobs, I found a recipe last night that is very slightly different (only amounts) and as Lou said uses a syrup to pour over.

Love this too although I put sugar with the lemon juice for the topping. Made one with oranges instead the other day.

This is actually from a 1000 freezer recipes book that's about 30 years old and it's my fave book (well, apart from my Delia one, lol). Nothing has ever gone wrong with any of the recipes.
CITRUS DRIZZLE CAKE.
First you have to make an all in one Victoria Sandwich mix using:
6oz SR Flour
1½ teaspoons baking powder
6oz soft marg or butter
6oz caster sugar
3 large beaten eggs
Beat for 2 or 3 mins until well mixed. Pour into a greased and lined 2lb loaf tin and bake for 50 - 60 mins or until cooked at 180ºC/350ºF/mk4. (I cook in my fan oven at 160º).
Allow to cool and make your syrup using:
juice of 1 orange
juice of 1 lemon
or 2 lemons instead of an orange and vice versa.

Put juice and sugar in pan and heat gently until the sugar has dissolved.
Make slits in the cake and spoon the syrup into them and over the cake. Drizzle melted chocolate over the top too if you like.

We'll have to get Patty to export some. She said Maria's lemon tree is
lovely and the fruits are ripe for picking. I love lemon flavour

have any of you tried those lemon ice lollies tesco do , they are in a mixed box with cola and cherry or soemthing , they dont half make your tabs laugh
