This sounds interesting
Bacon, Thyme and Potato Muffins
400g (13oz) waxy potatoes peeled and diced
salt and pepper
100g (31/2oz)smoked streaky bacon chopped finely
275g (9oz) self-raising flour
2 tsp baking powder
1tbs chopped thyme plus extra sprigs for decoration
175ml (6fl oz) milk5tbs olive oil 1 egg beaten
Pre heat oven to 220deg C; 425 deg F; and line a 12 hole muffin tin with paper cases.
Cook potatoes in a saucepan of salted water until softened, drain and leave to cool.
heat a frying pan and fry bacon until golden and crisp, leave to cool.
mix together flour, baking powder, chopped thyme and a little salt and pepper in a bowl, stir in potatoes and bacon.
Beat together milk oil and egg in a jug.
Add the dry ingredients and stir together using a large metal spoon until just combined.
Divide the mixture evenly between the muffin cases sprinkle with a little salt and scatter with thyme.
Bake for 15 to 20 minutes until risen and golden, transfer to a wire rack to cool serve warm or cold scatter with extra thyme and serve.

They sound delicious Billie. I've never even heard of savoury muffins before. What would you eat them with? Egg and chips????

They sound lovely, Billie: good for a quick lunch, I would think. Seem to remember I cut out a savoury muffin recipe, but don't think it was this combination.
