Christmas Ham Empty Christmas Ham

Christmas Ham (unsmoked)

Soak ham for 12 - 24 hours in cold water. Replace water a couple of times.

Weigh ham to determine cooking time - approx 25 minutes per 500g.

Place ham, rind side down, in a large pan.

Cover with cold water and 50g Demerara sugar.

Bring to boil, then simmer for HALF total cooking time.

Drain the ham and remove rind, but keep as much fat as possible.

Score the fat in diamonds and place a clove in the centre of each diamond.

Spread with Dijon mustard and sprinkle Demerara sugar on.

Place ham in a roasting tin (disposable is highly recommended!)

Place in oven at 180C for remaining cooking time, turning up the temperature to 220C for the last half hour.

That's more or less how I do mine, just have never put sugar in the cooking water - not heard of that before.

I'd never cooked one until Cal gave me this recipe. It looked so easy, I thought I'd give it a go and I'm glad I did!

Do you suppose soft brown baking sugar would do? I haven't got demerara, cos I am the only one that would put it in coffee and I am diabetic so tend to avoid it. However, I do have some baking sugar left over
