Meringues Empty Meringues

I ended up with 4 egg whites after making my apple tart so have them cooking in the oven now making like a Pavlova but can it be frozen? - as haven't got fruit or cream to fill it with and as Malcolm's not going to be here for a few days don't want it to go to waste.

I'm sure you could keep meringues for a few days, Cath: seem to remember that from somewhere (not that I've ever made meringue other than a topping).

Have just Googled: meringues will keep for a week if stored in an airtight container: don't put in the fridge and definitely don't freeze, it said.

Will be round for the pavlova as well!

I freeze lemon meringue pie and it sinks a bit but is ok, I wouldn't use it for a dinner party but it's fine ofr the family.

Well didn't need to freeze as it broke up when I took it off the tray so we ate it tonight with fruit and ice cream, so sorry none left now.
