Tuna quiche-SW
Free on red days.
serves 6- always gets me this as if its free then you can eat what you want eh?
1 med onion chopped
3 rashers lean bacon, finely chopped
4 eggs
S&P
2 x 198g cans of tuna in brine
1 tomato sliced
2 large mush sliced
Preheat oven to gas 5/190 c. Dry fry onion with bacon until onion is soft. Place in shallow ovenproof dish. Beat the eggs with seasoning.
Drain and flake tuna. Add to the dish with bacon and pour beaten eggs over.
Arrange slices of toms and mush on top. Bake for about 30 mins or until set and golden.
I find it takes a little longer sometimes.
Serve with roasted peppers or free veg.

another good idea..i do like omellettes but they dont exactly look appetising when i have turned them...this sounds great.
