Rosie made this in a plastic bowl you get from a christmas pudding. Roughly 4 small portions.

2oz marg/butter
2oz caster sugar
2oz SR flour
1 egg.

Make sponge mix. Cream marg and sugar, add egg and flour.

Put large tablesp of syrup in the bowl, add the sponge mix and cover in cling film. It took 3 mins in our microwave which is 850w.
Test through clingfilm with skewer to see if cooked and release steam.

So easy and scummy. Could make it with jam I guess or raisons etc.

Sounds blissful! Might just make it for my son out in Italy next week as it is something I could easily do and he would so so love it!! Thanks for this Jo.

Ooh - thanks for posting that, Jo. Not that we have pudding usually, but I might have to try this, purely for quality control reasons/in case I want to serve it to guests (well, that's my excuse).

I always make my sponge puds in the microwave, have for years. Only have them now and again but they are delicious!
